Our family’s history with Japan spans over three decades.
In 2011, we opened our flagship Japanese restaurant NOBORI in Cluj-Napoca, Romania, bringing the delicacy of Japanese cuisine to Romania. With unrelenting care for ensuring the authenticity of every dish we serve, we have soon brought NOBORI to receive acclaim from Romanian and Japanese guests alike. It is from spontaneous exchanges with guests visiting us from Japan that our chefs set out to concoct inventive recipes that blend ancestral Romanian cookery and a Japanese sense of aesthetics—Romanian kaiseki cuisine was born.

- Inventing Romanian Kaiseki Cuisine -
Kaiseki cuisine requires that each ingredient retain its full natural flavor and that no one ingredient overtake the others. Our team of chefs set out to respect this delicate balance while never compromising the Romanian roots of our dishes. Similarly, the visual composition of each creation must elevate the sensory experience without distracting from taste.
Working with local, organic producers, we carefully select each individual ingredient so that it remains faithful to the authentic taste of Romanian cuisine, while opting to import directly from Romania other essential preparations.
Our opening menu includes the finest Omi wagyu beef from Shiga Prefecture, braised in the traditional Romanian fashion and our signature dessert, Matcha Papanash. This mouthwatering dessert was conceived as a twist on the traditional cheese-based Romanian dessert Papanash, while taking care to cater to the Japanese palate by lowering both sugar content and serving size.

Dining Experience
- Celebrating Japanese & Romanian Artistry -
Our dishes are best complemented with our Marqvis wines and palinca: This small-scale, familial production bears the richness of our hand picked grapes, native to the Romanian terroir, that can only be enjoyed at Nobori.
During the time your spend at Nobori, you will also discover the artworks of Cristina Prisacariu, a Romanian artist using painted eggshells to create compositions inspired by Japanese sceneries. And there is another artist, Ronald Pangrati, whose artwork you can discover "The Sun Stays in My Mind,2019"
Our double-layered titanium glasses are the creation of the Japanese maker - SUS Gallery, from Niigata, that will keep your Palinca, which is homemade traditional Romanian spirit, at an ideal temperature for up to two hours.
